21 pin to 9 pin conversion? (installation question)

The last of my locos to be converted to DCC will be a Rivarossi U-Boat which currently has motherboard with the 21 pin plug. Has anyone done an install with one of the 21-9 pin adapters? or would it be best to pull the motherboard and just do a full re-wire?

Yup, I've done a bunch of Bowser SD40-2s with the 21 pin to 9 pin harness. Easy Peasy. The only thing I ran into was there wasn't enough lighting connections (other than the basics - front, rear & ditchlghts) on the 9 pin side, so you'll have to use the 6 pin side for additional lighting connections.
